I recently graduated and I'm about to start a job and earning money (for now, about £1000 per month). At what stage do I start paying tax? and how do I explain to my employer not to deduct tax yet?

You will normally start paying tax straight away. Your tax deductions will be calculated based on your tax allowance. If you think you may be due a tax refund you can check at the end of the tax year using your P60.
